The US Department of Agriculture names Prime beef as the highest quality of meat raised in the US, grading above Choice and Select beef. However, the USDA allows for meat to be considered Prime when it only has “slightly abundant marbling”- a standard that just isn’t high enough for us. That’s why we designate our beef in this program Upper Prime. The abundant marbling of these strips simply stands above the rest.
