Carved from the chuck flap of the short rib, the Zabuton is an especially tender cut (its name translates to “little pillow” because it’s so soft) and is packed with robust flavor. Hitachi Gyu Zabuton makes an incredible steak sandwich, a beautiful steak salad, or could simply be grilled and served as a whole steak entrée.
