These cuts are bone-in ribeyes, but they contain more meat than a traditional ribeye and have a frenched bone that imparts flavor and quite frankly just looks impressive. Think tomahawk with the bone cut shorter - this option is more space friendly while still being shareable.
Being Santa Carota raised, these cowboy hawks are leaner without sacrificing flavor. The cattle are free to roam and are finished with carrots, infusing their muscle tissue with vitamins like B12 and beta-carotene. Not only is this beef healthier, but it is also more moist and delicious without feeling too rich or heavy.
